How to Eat More Veggies
Did you know that 90% of Americans do not eat enough vegetables!?! A new year is the perfect time to start cooking with more veggies! There are many easy ways to incorporate them into meals you’re already eating, or you can try some new ones! Check out some of our favorite ways to eat more veggies below.
Add veggies to your breakfast!
If you’re not eating veggies for breakfast, you’re missing out! Whether you’re a sweet or savory person, there are so many ways to incorporate fresh produce in your morning meal. You can add almost any veggie to a frittata, which is perfect for meal prep or using up a lot of veggies you have leftover. You can also add greens like spinach to your morning smoothie! Another idea is to make toast with roasted veggies and an egg on top.
Elevate your current meals!
One of the easiest ways to eat more veggies is to just add them to what you’re already eating. Jazz up pizza night by adding arugula on top or toss in some roasted squash to your next pasta dish! You can add a side of veggies to any meal and it will make it even better! We also love prepping toppings to have ahead of time like pickled veggies and marinated mushrooms.
Soup!
Winter is the perfect time to make some delicious veggie-filled soups! All you typically need is broth, spices, and you can get creative with the rest! From pureed squash soup to minestrone, there are lots of vegetable-focused soup recipes out there!
Prep veggie snacks!
Vegetables make great snacks and can be prepared in a lot of different ways. You can cut up carrots and eat them with hummus or another dip. Kale, sunchokes, and beets are great for slicing thinly and making chips. Making veggie fries out of veggies like kohlrabi or turnips is one of our favorites!
