Beet Pasta Recipe

Need plans for Valentine’s Day? Make beet pasta!

Ingredients:

- 2-3 beets (depending on size)

- 1 onion

- 1 head of garlic

- salt, pepper, any other seasonings

- 1 box of pasta

- olive oil

- cashews

- nutritional yeast

- almond or oat milk

- reserved pasta water

Recommended toppings:

- microgreens

- crushed pistachios (or any other type of nut!)

- protein of choice (tofu strips would be a great addition!)


Instructions:

Roast chopped beets, onion, and garlic in the oven. While they are baking, cook pasta on the stove. Then, add roasted veggies, cashews, almond/oat milk, nutritional yeast, olive oil, and pasta water to blender and blend until smooth (add more liquids if necessary!). Add the sauce to your cooked pasta and stir! Add toppings and enjoy with your valentine! 💞
