All About Ramps!

Spring-favorite RAMPS are officially here! We're so excited to include them in upcoming CSA shares and also offer them for ordering a la carte in our Online Farmers Market! Haven’t tried them before? Learn more about this wild allium below! Ramp season is short - so order some now while we have them in season and incorporate them into your spring cooking!

What are they?

Ramps are in the allium family along with scallions, leeks and onions. They have a sharper, stronger garlicky-onion flavor and can be used interchangeably with other alliums. Ramps can only be foraged from the wild – preferring dappled shade, a thick blanket of decomposing leaves and moist soil to thrive – and are a hyper-seasonal treat!

 

How are they harvested?

We partner with our friends at Mid-Atlantic Foragers and Tee's Wild Edibles who are careful not to over-harvest this delicate perennial wild food. Because they are not cultivated and we must leave a majority of them in the ground to keep growing, our supplies are very limited year after year! 

 

When are they in season?

 April and May – just a micro-season that will be shorter or longer each year depending on the weather conditions.

 

How do you cook them?

Add them to an egg scramble or frittata, pickle them, make pesto, add them to pasta or toast! Try some of the recipes below and check out the ramp page on our website for even more ideas!
